ARCHIPELAGO BREAD WITH HEMP                                            Oilseed hemp in baking:

6 dl water

2 dl wholegrain wheat flour
9 dl Archipelago bread flour mix
100 g butter or margarine
50 g hemp powder
50 g dehusked hempseeds, part for dough and part for bread
decoration
100 g dried cranberries
1 tbsp caraway seeds
syrup and water for greasing, when the bread comes out of the
oven

Mix the yeast, syrup and salt in lukewarm water. Add the flours
into the mixture and knead the dough. Add the softened fat into
the dough. Add flours when needed. Add other ingredients:
hemp powder and seeds, and caraway seeds and cranberries.
Knead for five minutes and leave the dough in a bowl to rise for
half an hour. Grease the bread tin. If you wish, you can cover
the tin with breadcrumb-hempseed mix. Pat the dough on the
tin and let it rise for fifteen minutes. Bake the bread at a slightly
lower level than the middle of the oven at 175 C̊ . The baking
time is approximately an hour. Finish the oven-fresh bread with
a syrup-water mix and let it cool.
