SPELT-TABBOULEH WITH HEMP SEEDS Source of versatile oil:
Tabbouleh originating from the Middle East can be made almost Almost 80 percent of hemp oil is polyunsa-
completely from Finnish ingredients. For example spelt and turated fatty acids
hemp are good raw materials to it. Lots of fresh vegetables and
herbs can be added to tabbouleh. You can make the tabbouleh Optimal Omega-3 and Omega-6 ratio
more filling by adding for example cheeses or seitan to it.
Rich in minerals: phosphorus, potassium
0,5 l spelt pearls and magnesium
1 kg tomatoes
1 cucumber Rich in vitamins B and E
2 chili pods
juice and grated peel of lemon
fresh flat-leaf parsley, mint, coriander and basil
spring onion
1 dl dehusked hempseeds
1 dl roasted, salted hempseeds
salt and black pepper
Cook the spelt pearls, instill and cool. Chop the tomatoes,
cucumber, chili, onion and herbs. Toast the dehusked hemp-
seeds lightly on the pan. By substituting a part of the dehusked
hempseeds with whole hempseeds you will get a nice contrast.
Mix the ingredients.
Finish up with hemp oil or hemp oil – lemon vinaigrette (recipe
on the left page). Decorate with goat cheese.
